Ground Turkey Shell-less Tacos,  Take 2!

I finally got around to remaking my Shell-less Tacos described here: Take 1!

I did everything exactly the same, except I made my own salsa! I used the store bought salsa to flavor the ground turkey like before. I just wanted to make sure my salsa tasted good before I mixed it all up in my food. 

Salsa:
Extra virgin olive oil, heated
1 small onion chopped finely, sauteed
1 & 1/2 tsp dried cilantro
Pinches: salt, pepper, garlic powder, chili powder
2tbsp honey (in many recipes I saw people used sugar, so this was my substitute)
A splash of organic chicken broth

While I cut up 3 large Roma tomatoes I threw the squishy insides in the sauté pan.
I threw the chopped tomatoes in at the end and turned off the heat but left the pan on the warm burner while I mixed it all together and then prepared the other parts of the meal

Stuffed Bell Pepper

I am all about using left overs and excess ingredients, so be prepared to see a lot of that in this blog! So this is a meal of left overs/excess!



Stuffed Bell Pepper, lunch

Ground turkey (from dinner last night), corn, cheddar cheese, stuffed in the green bell pepper (half of one because that's what I had on hand), topped with salsa with a side of cucumber. 

I originally was going to bake this but I had exactly 20minutes to cook and eat before I had to head out the door again (while feeding two kiddos). So I just microwaved the left over meat and corn.

Incl: Ground turkey (cooked with 1/4 cup salsa, pinch of pepper, 1 tsp chilli powder), shredded cheddar cheese, sliced green bell peppers topped with extra salsa (store bought) over a romaine heart leaf. Plain corn on the side.

Suggestion: This was delicious, I was concerned because I hadn't had ground turkey before, but adding the salsa while cooking kept it moist and gave the meat a lot of flavor. I loved this meal, my only change would be using homemade salsa.




Our Sad Salads

Tossed Salad with Orange Wedges

Incl: Romaine hearts, cucumbers, spinach, carrots, cherry tomatoes. (Left over salad from last night), and half an orange.
I also used Catalina dressing... this is not on my personal allowed list.. but the fact that Wendy's had burgers for 69cents today and I still ate a salad, we're going to just throw this into the win column and move on.

Suggestion:  This was plain, boring, dull, so next time I need to spice it up and include a protein.

Tossed Salad with Cheese & Crackers

Incl: Romaine and spinach salad with chia seed, garlic croutons, and 2tsp Caesar dressing.
Cheddar cheese and whole wheat crackers.

Cinnamon Fried Bananas with Almonds // Spinach & Egg White Scramble with Salsa

Cinnamon fried bananas from the link, with half a tbsp chopped unsalted almonds with 2% milk.
While not exactly super "healthy", it is clean! Only 1/3 of the sugar/cinnamon mixture was used, and sugar in the raw was subbed in.

*While the store bought salsa qualified as clean eating (all ingredients are 'pronounceable'), it of course would be even better with home made

UPDATE: I forgot to mention that my toddler wanted a taste of this and as he walked away chewing it, he was "Mmmmm"ing all the way back to his play area, then promptly returned for 2nds, 3rds, and so on. 2/17/16

Honey Balsamic Chicken Salad // Fruit Salad

Alana here! Lunch was a struggle, I ended up eating left overs (a semi healthy meal, but still...). I spent so much time trying to plan for breakfasts and dinners, I forgot about lunch! Anyways it'll be better tomorrow!



Honey Balsamic Chicken Salad, Dinner
Half a chicken breast baked with marinade (1/4 tsp extra virgin olive oil, 2 tbsp balsamic vinegar, 2 tbsp honey, pinch of salt, pinch of pepper, garlic powder... I accidentally threw it in out of habit instead of mincing fresh garlic) on top of a tossed salad. I used romaine hearts, spinach, carrots, cucumber, cherry tomatoes, dusted with 1/4 tsp grated Parmesan cheese.

Suggestion: Next time I will set some marinade aside to sprinkle on the salad so it's not too dry.


Fruit Salad, Dessert
Incl: raspberries, strawberries, blueberries, blackberries, kiwi
Side note, the dessert I really wanted as a fudge sundae.. but I resisted, go me!
